Wacky Cake

Ingredients

3 cups flour
2 cups sugar
1/2 cup cocoa
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons vinegar
2/3 cup oil
2 teaspoons vanilla
2 cups water

Instructions

Sift dry ingredients together into a 9x13 inch cake pan.
Make three wells in the combined dry ingredients. Pour vinegar in one. Pour vanilla in the second. Pour oil in the third.
Add the water and mix well (a fork works well).
Bake at 350 degrees Fahrenheit for 40-45 minutes.

Notes

I’m not sure if I was getting out of hard labor or if Dad was manipulating me into baking him a cake, but he did let me use the excuse that I was going to bake a cake when there were weekend projects needing to be done. A scoop of vanilla ice cream out of the big tin from Schwans went very well with this simple cake.

Mom tells me that Bonnie adds an egg to make it a richer, moister cake. I like to sprinkle chocolate chips on top before baking to satisfy that desire for frosting without the added work.
